To make this particular tea, thin stems are used and mixed with the twigs and thin leaves of a Sencha. The thin green leaf stems, together with the dark green Sencha, give it a shiny appearance. Also very popular for its low caffeine content. As far as taste is concerned, it has soft spicy notes, slightly spicy, like nutmeg. Very pleasant to drink, similar to a higher category Japanese sencha. It gives a lemon-green/yellow infusion.
For optimal results, it is recommended to infuse with water between 70 and 80·C. Infuse about 2-3 minutes with about 3 grams of tea for one cup. If you notice bitterness, reduce the temperature of the water or the amount of tea.
